For authentic Thai cooking, you need this condiment. It accompanies curries, fried rice, and many other Thai dishes. If you have been to Thailand you may have seen a dish of chillies in fish sauce placed permanently on every table of many local restaurants.
Ingredients
fresh chillies, preferably small ones, sliced approximately 1-2 mm. thick
fish sauce
(Amount of chillies and fish sauce as required. 1 tablespoon of fish sauce + 1-2 small chillies are enough for 1 serving, as seen in photograph)
Directions
1. Put fish sauce in a small dish.
2. Add chillies.
3. Serve
Variations
- Add a few drops of fresh lime juice to give it a tangy twist. I always do.
- Add thinly sliced shallots or garlic. I prefer shallots but both are nice to try.
- Chillies in fish sauce + sliced shallots + lime juice is a great condiment for boiled eggs. Serve a dish of cooked (steamed) rice with a boiled egg (not too hard-boiled) and this condiment. You'll get into one of the most authentic experiences of Thai cooking. Simply delicious!
Note : - This condiment is best made and eaten in the same day when the chillies are fresh and the fish sauce is not crystalized. So please make only a small amount at a time.
